This is a small easter egg google built into G.E. a flight simulator mode. When in "view" mode press Ctrl+g and you'll enter a flight simulator mode which lets you do flips and turns with the camera and also lets you scroll a little faster.

Just FYI, in the updated version (http://www.googleearthhacks.com/forums/showthread.php?t=128) they disabled the CTRL-Z, because too many people were using it by mistake (trying to undo, which is commonly called using CTRL-Z).
In that case, you can go to "Tools", "Options" and choose the "Navigation" tab at the top.

actually you don't need to turn it off because in the new version you can still use the defualt mode within the flight simulator mode.

Can anyone tell me how to roll while moving forwards ... I only seem to be able to barrel rolls while stationary ...

by what I discovered you can only do barrel rolls while stationary.
