Has any of the math genius out there come up with a formula for what size army should you use to take what size city? Or defend your city?
Is it worth using a 10,000 men army to capture a city with a population of 1,000,000? Or is it worth defending that city with that many men?
Just curious if anyone has come up with a chart showing the ratios of geos earned vs geos spent to get a city?

It really depends on a number of factors. Some of these include: how long you hold the city for, how many armies those troops are divided up into, and other factors, such as the strategic value of the city's location.
When it gets down to the raw numbers, I believe each army costs 1 geo per day, plus the number of troops in it. I ran a number of calculations based on different sized armies, and I believe the most accurate number I came up with for troop costs was 0.00576 geos per troop. So an army of 10k troops would cost 58.6 geos per day to maintain. The city will not produce anywhere near that much in tax revenue. I think 1,000,000 would be somewhere between 10 and 20.

and m the number of all troops (in thousands) in the city
this will cost you
n + m x 5,8 Geos
every day
but the question, if it is worth to spend 100Geos for a city that brings 10Geos tax, i cant answer ;)
